Rx Vegan Pesto

Fresh greens and garlic make this pesto a delicious option for pasta, grain salads and pizza.

  • 1 Cup Sunflower Seeds raw
  • 2 Cloves Garlic chopped
  • 1/4 Cup Olive Oil (or water for a no oil option)
  • 2 Big Handfuls Arugula or Basil
  • 1/2 Cup Water (as needed for desired consistency)
  • 1/2 Lemon juiced
  • Big Pinch Sea Salt


  1. Gather your ingredients along with your food processor.

    Add all of the ingredients to the food processor except the 1/2 cup of water and blend for a minute or two.  

    Gradually add the water until you achieve the desired consistency.

    Taste and adjust seasoning (salt and lemon juice) as needed.

    Enjoy on pasta, on pizza, sandwiches and as a dressing on grain salads.

    A super delicious way to get your greens!
