Pizza is an easy and delicious way to gather the family for a home cooked meal.

Find a good quality pizza crust in your area and have them on hand in the freezer for those nights when you want delicious and easy.

I buy a few different brands of pre-made multigrain pizza crusts.

You can also buy a whole wheat pizza dough and go a little more old school.  Give everyone a piece of dough and have the family make individual pizzas.

My family loves this option.  I create a “pizza bar” with topping options and everyone has fun creating the best pizza.

Serve the pizza with veg and hummus or while the pizza is in the oven mix up a big fresh salad as a side dish.

ps…make more pizza than you will eat.

Vegan Pizza

Easy, delicious homemade pizza.

Ingredients

  • 1 Good quality multigrain pizza crust
  • 1/3 cup pizza sauce or pesto
  • 1 Medium Onion sliced
  • 1 8 oz container Mushrooms (button or cremini)
  • 1 Red Pepper Diced
  • 1 Pinch Salt
  • 4 Artichokes from a jar.
  • 1/2 Cup Olives
  • 1/2 Cup Cheezy Sauce recipe is on my website
  • Handful Fresh Basil chopped/torn or left whole
  • 1 tsp Hot Pepper Flakes-optional

Instructions

  1. Heat oven to 400 degrees F.

    Put in pizza stone if using.

    Take pizza crust out of packaging and place on a pizza paddle for easy delivery into the oven.

    Spread the pizza sauce or pesto on the crust. Ensure adequate coverage however careful not to add too much or you will end up with a soggy crust. 

    Chop the onion, red pepper and slice the mushrooms.

    Sauté the veg in a little oil or if you want this recipe oil free, dry sauté or sauté with a little veg stock.  Mushrooms come up golden and delicious if you dry fry until they begin to release moisture.  While sautéing salt the veg with a pinch or two of salt for maximum flavour.  

    Drain the artichokes and olives on paper towel and chop.

    Top the pizza with all the toppings, and drizzle the cheezy sauce to finish.

    Sprinkle hot pepper flakes and bake in oven, directly on the racks or on a pizza stone for about 10 minutes, checking halfway.

    Broil for the last minute, to create a golden finish.  

    Remove from the oven with the pizza paddle, let sit for 5 minutes, cut with a pizza cutter into slices and enjoy!

    Get creative.  These toppings are merely a suggestion.
